Grown in French Polynesia, its supple, glossy pods develop a rounded aroma with delicate caramel and anise nuances. Researchers have identified more than 200 compounds in Tahitian vanilla’s aroma, helping explain the depth that makes it such a distinctive ingredient.

It begins with a climbing orchid whose individual flowers bloom for just one day. Growers pollinate each flower by hand within that brief window, then wait around nine months for the pod to develop. After harvesting, a further two to four months of preparation and sun drying help bring out its characteristic fragrance. On Taha’a, known as the “Vanilla Island”, this patient work produces vanilla esteemed by chefs for its appetising aroma.

Fragrance Journey

Tangerine makes a delicious first impression. Its juicy sweetness meets vanilla almost immediately, revealing just how beautifully the two work together. The vanilla rounds off the citrus sharpness, while the tangerine lifts the vanilla into something light and creamy—the scent of vanilla ice cream threaded with sweet citrus. Lemon adds a little brightness around the edges, keeping this opening fresh and lively.

The vanilla is already present beneath the fruit, giving the opening its soft, creamy character. Tangerine shines through that sweetness, creating a balance between the freshness of citrus and the comforting aroma of a frozen dessert.

Then coconut pulls the fragrance into creamy depths. The airy, ice-cream-like opening becomes fuller and more indulgent, with coconut enriching the vanilla and giving its sweetness a smooth, almost spoonable quality. The citrus remains a bright accent as the creamier notes come forward.

Malt deepens this richness further. Its warm sweetness brings the impression of a vanilla malt dessert, adding substance to the coconut and drawing out the gourmand character of Tahitian Vanilla.
